#FridayYumYum Tijuana Pie

This recipe came to me courtesy of my good friend, Maxine.


Tijuana Pie

2 lbs ground hamburger meat (cooked and drained, salt and pepper to taste)
2 can Pinto beans with jalapenos (undrained)
1 can cream of chicken soup
1 can cream of mushroom soup
Nacho cheese flavored tortilla chips
2 C Cheddar Cheese
2 C Mozzarella Cheese

Cook meat. Add canned ingredients. Cook until bubbly. Layer crushed tortilla chips on bottom of casserole (med size rectangular). Layer in the following order: Meat, cheese, meat, cheese. Bake at 350 degrees F until bubbly. When serving, top with shredded lettuce, tomatoes, sour cream or guacamole.

  2. Hi Denise - My kids would LOVE this! I also like your Word of the Day box over at the side. I tried to figure out a way to use that word in my comment, but was not clever enough!

    1. Yeah, that word of the day box comes up with some terrific words. I just realized esculent had something to do with food!

  3. Oh I like that -- especially with the toppings. I might change the mozzarella to pepper Jack and add a few herbs and spices (cumin, oregano, cilantro, maybe). But we like intense flavors. I bet this looks pretty at the table with the toppings.

    1. Oooh, I like the idea of the pepper jack and the different seasonings. I'll have to try that out. This recipe is a family pleaser and it does give a nice presentation at the table.

  5. I think my son would like this a lot - would make a nice change from chilli con carne and nachos which is about our usual extent of recent Mexican style food. Which reminds me, I haven't made fajitas in forever!
